Cheesy Peri Peri Stuffed Pav

Peri peri or piri piri is a fiery sauce of African origin, made with fresh red chillies. It is tinged with multiple flavours – garlicky, spicy, tangy and herby – and is guaranteed to tickle your taste buds and fire up your appetite. In this innovative recipe, we have sandwiched pav bread with freshly-made peri peri sauce and topped it with cheese. The outcome is a scrumptious and cheesy treat that everybody will love. Serve the Cheesy Peri Peri Stuffed Pav immediately after preparation, to enjoy the crackling flavour and gooey cheesiness. Try other pav based recipes like Pav Sandwich and Pav Bhaji Sandwich.

Preparation Time: 10 minutes.
Cooking Time: 15 minutes.
Makes 8 stuffed pav.

8 ladi pav, slit vertically
16 tsp butter

For the peri peri sauce
½ cup chopped fresh red chillies
8 garlic cloves (lehsun)
1 tsp finely chopped coriander (dhania)
1 tbsp lemon juice
1 tsp dried oregano
1 tsp dried thyme
½ tsp dried parsley
2 tbsp oil
Salt to taste

For the topping
8 tsp grated processed cheese

For the peri peri sauce
Combine all ingredients, without using water in a mixer and blend till smooth. Keep aside.

How to proceed
1. Heat 1 tsp of butter on a non-stick tava (griddle), place the open pav and cook on a medium flame till it turns light brown in colour from both the sides.
2. Put 1 tsp of the prepared peri peri sauce on each side of the pav and close the pav.
3. Again cook the pav on a medium flame using 1 tsp of butter till it turns golden brown in colour from both the sides.
4. Finally top it with 1 tsp of cheese.
5. Repeat steps 1 to 4 to make 7 more stuffed pav.
Serve immediately.
