Chicken Cheese Potli | Sanjeev Kapoor Khazana

Refined flour dough stuffed with chicken cheese mixture, shaped into potlis and deep fried.

CHICKEN CHEESE POTLI

Ingredients

2 boneless chicken breasts, boiled and shredded
3 tablespoons grated cheddar cheese
3 tablespoons grated mozzarella cheese
250 grams refined flour (maida) dough
1 teaspoon red chilli flakes
Crushed black peppercorns to taste
1 tablespoon shredded fresh basil leaves
Salt to taste
Refined flour (maida) for dusting
Oil for deep-frying

Method

1. Mix together chicken, cheddar cheese, mozzarella cheese, chilli flakes, crushed peppercorns, basil leaves and salt in a bowl.
2. Dust the worktop with some flour, place the dough on it and roll out into a large disc.
3. Use a medium size cookie cutter to cut out discs from the large disc, stuff each with a portion of chicken mixture, brush edges with some water and shape into potlis.
4. Heat sufficient oil in a kadai. Deep-fry potlis till golden brown. Drain on absorbent paper.
5. Serve hot with tomato ketchup.
