Home style simple chicken curry, mildly spiced, best served with steamed rice.CHICKEN CURRYIngredients 750 grams chicken, cut into 1 inch pieces on the bone 2 tablespoons oil ½ dried coconut, sliced 2 medium onions, sliced Salt to taste 7-8 garlic cloves4-5 dried red chillies¼ teaspoon turmeric powder5-6 black peppercorns2 bay leaves1 inch cinnamon Fresh coriander sprigs for garnishingMethod1. Heat 1 tablespoon oil in a non-stick pan. Add dried coconut and onions and sauté for 2-3 minutes. Add salt, garlic cloves and dried red chillies and sauté till mixture turns golden brown. Remove from heat and cool.2. Put chicken pieces in a bowl. Add salt and turmeric powder and mix well. Set aside to marinate for 10 minutes. 3. Blend the sautéed coconut-onion mixture alongwith 3-4 tablespoons water into a smooth mixture. 4. Heat remaining oil in a deep non-stick pan. Add peppercorns, bay leaves and cinnamon and sauté till fragrant. 5. Add coconut-onion paste and sauté for 1-2 minutes. Add ¼ cup water, mix and cook for 1-2 minutes. 6. Add marinated chicken pieces, mix and cook for 1-2 minutes. Adjust salt and add 2 cups water, mix, cover and cook till the chicken is fully done. 7. Serve hot garnished with coriander sprigs.
