Chicken cubes cooked in butter garlic flavoured sauce with peppers.CHICKEN IN BUTTER GARLIC SAUCEIngredients250 grams chicken leg boneless, cut into cubes2 tablespoons cornflour slurrySalt to tasteWhite pepper powder to taste½ egg whiteOil to deep-fry2 tablespoons butter½ tablespoon blended sesame oil 6-8 garlic cloves, chopped1 tablespoon chopped celery1 small green capsicum, seeded and cut intro triangles 1 small red bell pepper, seeded and cut intro triangles 1 small yellow bell pepper, seeded and cut intro triangles 5-6 button mushrooms, cut into thick slices½ cup chicken stockSpring onion curls for garnishFried rice for servingMethod1. Combine together chicken pieces, salt, white pepper powder, cornflour, egg white and mix well. And set aside for 10 minutes2. Heat sufficient oil in a pan3. Deep-fry marinated chicken pieces in hot oil and cook till ¾ done and Drain on absorbent paper.4. Heat 1 tablespoon butter in a non-stick pan ,blended sesame oil, garlic, celery, and sauté till raw flavour of garlic go away5. Add mushroom and salt sauté for 2-3 minutes add ½ cup chicken stock and cook for 2-3 minutes6. Add fried chicken pieces and green capsicum, red bell pepper, yellow bell pepper, add cornflour slurry and mix well,7. Add remaining butter on a low heat and set aside8.
