Chicken Jhalfrezi | चिकन झालफ्रेज़ी | Sanjeev Kapoor Khazana

A flavourful chicken preparation to spice up your dinner table!
CHICKEN JALFREZI

Ingredients

300 grams boneless chicken breast, cut into 1 inch pieces
1 lemon, cut into half
1 tsp turmeric powder
1½ tsps garam masala powder
1½ tbsps ginger-garlic paste
Salt to taste
2 tbsps oil
1 tsp cumin seeds
1 medium onion, finely chopped
1 large tomato, finely chopped
1 tsp coriander powder
1 tsp red chilli powder
2 tbsps yogurt
1 tsp dried fenugreek leaves (kasuri methi)
1 tbsp cashew nut paste
1 medium tomato, sliced
1 medium onion, sliced
1 medium capsicum, sliced
Coriander leaves for garnish

Method

1. In a large bowl, add chicken, squeeze ½ lemon and sprinkle turmeric powder, ½ tsp garam masala powder, ½ tbsp ginger-garlic paste, salt and mix well. Set aside to marinate for 10-15 minutes.
2. Heat oil in a non-stick pan, add cumin seeds and let the colour change. Add onion and sauté till golden brown.
3. Add remaining ginger-garlic paste and mix well. Cook for 1 minute. Add tomato, sauté well and cook till pulpy.
4. Add coriander powder, red chilli powder, and remaining turmeric powder, salt and mix well. Add ½ cup water and mix well. Cook for 2-3 minutes.
5. Add yogurt and mix well. Cook for 3-4 minutes
6. Add the chicken and sauté for 1-2 minutes. Crush and add kasuri methi and mix well. Add cashew paste and mix well.
7. Add sliced tomato, onion and capsicum. Mix well.
8. Squeeze the remaining lemon and mix well. Add remaining garam masala powder and mix well. Cook for 1 minute and take it off the heat.
9. Transfer to a serving bowl, garnish with coriander leaves.
