Chicken strips cooked in onion tomato masala along with capsicum.CHICKEN KHURCHAN Ingredients250 grams boneless chicken, cut into strips 2 tablespoons ghee 1 tablespoon oil 1 tablespoon chopped garlic ½ tablespoon chopped ginger 1½ tablespoons butter1 medium onion, finely chopped 1 medium tomato, chopped1-2 green chillies, finely chopped1 teaspoon cumin (jeera) powder½ teaspoon coriander powder¼ teaspoon turmeric powder½ teaspoon garam masala powderSalt to taste1½ teaspoons lemon juice1 medium green capsicum, cut into strips1 medium onion, cut into thick slices1 teaspoon dried fenugreek leaves (kasuri methi) powder1 tablespoon fresh cream Fresh coriander sprigs for garnishing Method 1. Heat ghee in a non-stick pan. Add chicken strips and cook for 5 minutes. Remove from heat and set aside. 2. Heat oil in the same pan. Add garlic and mix. Add ginger and sauté for a minute. Add 1 tablespoon butter and chopped onions, mix and sauté till the onions turn translucent. 3. Add tomato, mix and cook till it turns soft and pulpy. Add green chillies, cumin powder, coriander powder, turmeric powder and garam masala powder, mix and cook till the oil separates. 4. Add remaining butter and mix well. Add salt, 1 teaspoon lemon juice, capsicum and sliced onion and mix well.5. Add chicken strips, mix and cook till the vegetables are cooked. Add dried fenugreek leaves powder and mix well. 6. Add remaining lemon juice and salt, mix and let it get heated through. Add cream and mix well.7. Garnish with coriander sprigs and serve hot.
