CHICKEN LAHORI PASTA

Ingredients

300 gms boneless chicken, cut into ½ inch cubes
2 cups penne pasta, boiled
1 tbsp oil
3 tbsps butter
1 medium onion, finely chopped
1 tbsp ginger-garlic paste
Salt to taste
1tsp red chilli powder
1tsp coriander powder
½ tsp roasted cumin powder
¼ cup yogurt
1 medium tomato, pureed
2 tbsps butter
2 tbsps refined flour
1 cup milk
50 gms processed cheese, grated
2 tbsps parmesan cheese powder + for garnish
Black pepper powder to sprinkle
Fresh parsley sprig for garnish

Method

1. Heat 1 tbsp oil and 1 tbsp butter in a deep non-stick pan, add onion and sauté for 1-1½ minutes or till onion turns golden brown.
2. Add ginger-garlic paste and sauté for a minute. Add the chicken and sauté for 2-3 minutes or till the chicken changes colour.
3. Add salt, red chilli powder, coriander powder and roasted cumin powder. Mix well. Cook on low heat and add yogurt. Mix well. Add tomato puree. Cover and cook on medium heat for 10-15 minutes.
4. To make white sauce, take remaining butter in a non-stick pan and melt it. Add refined flour and cook for a minute, stirring continuously. Gradually add milk and keep mixing with a whisk. Add processed cheese, parmesan cheese, salt and sprinkle black pepper powder.
5. Sprinkle black pepper powder in chicken mixture. Add the pasta and the prepared sauce. Mix well. Sauté for a minute on medium heat.
6. Serve hot, garnished with parmesan cheese powder and parsley sprig.
