A quick evening snack made using chicken malai tikka stuffed in roomali roti and grilled to perfection.CHICKEN MALAI TIKKA ROLL Ingredients4 roomali rotis 400 gms boneless chicken, cut into cubes ½ cup yogurt1 tsp green chilli paste1 ½ tsp ginger garlic paste¼ tsp nutmeg powder½ tsp green cardamom powder ½ tsp garam masala powder1 tsp chaat masala powderSalt to taste2-3 tbsp fresh cream1 tsp cornstarch2 tbsp malai 1 tbsp green chutney Juice of a ¼ lemon1 medium onion, cut into rings A few fresh mint leavesMethod 1. Mix yogurt, green chilli paste, ginger garlic paste, nutmeg powder, cardamom powder, garam masala, ½ tsp chaat masala, salt, fresh cream and cornstarch in a bowl. 2. Arrange the marinated chicken pieces on a baking tin lined with aluminum foil. 3. Bake at 180 degrees for 15-20 minutes or till the chicken is cooked. 4. Transfer into a plate. Add malai , green chutney, remaining chaat masala, lemon juice, onion rings and fresh mint leave. Toss.5. Place a roomali roti on a work top. Fill it up with the chicken mixture and fold into a roll.6. Grease a grill pan with some oil and grill the rolls till grill marks appear on both sides.7.
