Chicken Rara | Sanjeev Kapoor Khazana

A unique recipe of boneless chicken pieces cooked with chicken mince in onion tomato masala.

CHICKEN RARA

Ingredients

650 grams boneless chicken, cut into 2 inch pieces
250 grams chicken mince
10-12 cloves
1 teaspoon cumin seeds (jeera)
5-6 green cardamoms
2 blade mace
½ cup yogurt
¼ teaspoon nutmeg (jaiphal) powder
Salt to taste
3-4 tablespoons oil
3 medium onions, finely chopped
1 tablespoon ginger-garlic paste
2 medium tomatoes, chopped
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
1 teaspoon coriander powder
2 green chillies, slit
1 tablespoon chopped fresh coriander leaves + for garnishing

Method

1. Dry roast cloves, cumin seeds, cardamoms and mace till fragrant. Remove from heat, cool and grind to a fine powder.
2. Mix together yogurt, 1 tablespoon prepared powder, nutmeg powder and salt in a bowl. Add chicken pieces, mix and refrigerate to marinate for 1-2 hours.
3. Heat oil in a pressure cooker. Add onions and sauté till lightly browned. Add ginger-garlic paste, mix and sauté for 30 seconds. Add marinated mutton, mix and cook for 2-3 minutes.
4. Add tomatoes, mix and cook till they turn soft and pulpy. Add chilli powder, turmeric powder and coriander powder, mix and cook till the oil separates.
5. Add chicken mince and mix. Add green chillies, mix and cook for a minute. Add 3 cups water, stir, cover and cook till the pressure is released for 5-7 times. Add coriander leaves and mix well.
6. Garnish with coriander leaves and serve hot.
