Chicken Schezwan Momos | Sanjeev Kapoor Khazana

Spicy schezwan flavoured chicken mixture stuffed into momo dough balls, shaped and steamed to perfection.

CHICKEN SCHEZWAN MOMOS

Ingredients

150 grams chicken mince
200 grams refined flour (maida) dough
2 tablespoons oil
1 teaspoon finely chopped ginger
1½ tablespoons finely chopped garlic
1 tablespoon finely chopped celery
1½ tablespoons red chilli paste
Salt to taste
White pepper powder to taste
½ teaspoon vinegar
2-3 green chillies, chopped
2 tablespoons chopped spring onion greens
1 tablespoon light soy sauce
1 tablespoon tomato ketchup
Refined flour (maida) for dusting

Method

1. Heat oil in a non-stick pan. Add ginger, garlic and celery, mix and sauté till fragrant.
2. Add chilli paste, mix well and sauté for a minute. Add ¼ cup water, stir and cook till the oil separates.
3. Add salt and pepper powder and mix. Add vinegar, mix well and remove from heat.
4. Mix together chicken mince, green chillies, 2 tablespoons prepared sauce, spring onion greens, soy sauce and tomato ketchup in a bowl.
5. Dust worktop with some flour, place dough on it and roll out into a large thin disc. Use a medium size cookie cutter to cut out roundels from it.
6. Place a portion of chicken mixture in the centre, bring the edges together and shape into momos.
7. Heat sufficient water in a steamer. Place the momos in it and steam for 10-15 minutes.
8. Serve hot with sesame-soy dip.
