Shami kabab are made with ground meat, chana dal (bengal gram), spices, ginger, garlic, herbs and egg. These are mostly made using mutton but calorie conscious folks also make these shami kabab using chicken.

To make these, all the ingredients except eggs are cooked until soft and cooled down. Processed to a coarse mixture or fine paste and then mixed with egg as needed for binding. I have processed the mixture to coarse as it does not absorb oil when fried.

Shami kababs made with fine paste tend to turn very very soft , soggy and can break while frying.

The mixture is then made to balls and flattened. These flattened discs are dipped in the lightly beaten egg and then fried in oil.
