Winters are here, and so are all things warm and comforting. What can be a better option than a piping-hot bowl of Chicken Stew, super flavourful and oh so delicious!

CHICKEN STEW

Ingredients

750 grams boneless chicken breasts, cut into 1 inch cubes
1 tbsp coconut oil
1 inch cinnamon stick
3-4 cloves
2-3 black peppercorns
8-10 curry leaves
2-3 green chillies, slit
1 large onion, thinly sliced
1½ cups coconut milk
Steamed rice to serve

Method

1. Heat coconut oil in an earthen pot, add cinnamon stick, cloves, and black peppercorns, curry leaves and green chillies and mix well. Add onion and sauté till translucent.
2. Add chicken and sauté well. Add salt, mix well, cover and cook till chicken is ¾ cooked, sautéing occasionally.
3. Add coconut milk and mix well. Cover and cook till the chicken is cooked completely.
4. Transfer into a serving bowl, serve hot with steamed rice.
