Spicy chicken mince mixture stuffed in whole bell peppers topped with cheese and baked.CHICKEN STUFFED BELL PEPPERSIngredients250 grams chicken mince 4 large mixed bell peppers 1 tablespoon oil3-4 spring onion bulbs, chopped1 medium tomato, finely chopped1 teaspoon paprika1 teaspoon dried mixed herbsBlack pepper powder to taste Salt to taste 3 tablespoons finely chopped green capsicum¾ cup grated processed cheese4 cheese slices Method1. Preheat oven to 180º C.2. Cut the top portion of bell peppers and scoop out the seeds to make cups. 3. Heat oil in a non-stick pan. Add spring onion bulbs and sauté till translucent. Add tomato, mix well and cook till it turns soft and pulpy. 4. Add paprika, mixed herbs, pepper powder and salt and mix well. Add chicken mince and mix. 5. Add some water and mix. Add capsicum, mix well, cover and cook till fully done. Add grated cheese and mix well.6. Stuff the prepared chicken mixture into bell pepper cups and top each with a cheese slice. 7. Place the stuffed bell peppers on a baking tray, put tray in the preheated oven and bake till the cheese melts.8. Serve hot with tomato ketchup.
