CHICKEN TIKKA LAZEEZ
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Chicken Marination
900 gms Chicken breast, cut into diced,
cup Curd, beaten,
1 heaped tbsp Ginger garlic paste,
Salt to taste,
tsp Turmeric powder,
tsp Degi red chili powder,

For Boiling Onion
Water as required,
Salt to taste,
1 heaped tbsp Ghee,
4 no. large Onions, roughly sliced,
2 no. Green chillies (less spicy & roughly chopped)
4-5 no. Garlic cloves,
5-6 no. Cashew nuts,
tsp Sugar,

For Sauteing Chicken
2-3 tbsp Oil,
Marinated Chicken,

For Chicken Lazeez
2 tbsp Oil,
1 heaped tbsp Ghee,
2 no. Bay leaf,
1 no. Green cardamom,
1 no. Black cardamom,
Prepared Onion Paste,
1 heaped tbsp Ginger Garlic paste,
2 tsp Coriander powder,
tsp Turmeric powder,
A pinch of Degi red chili powder,
1 tsp Ghee,
cup Curd, beaten,
1 tsp Black peppercorns, crushed,
cup fresh Tomato puree,
1 Green chili, slit into middle,
1 tbsp Tender coriander stems, finely chopped,
1 cup Water,
1 tbsp Ghee,
Sauteed chicken,
1 tsp Sugar,
1 tsp dry Fenugreek leaves, crushed,
1 tbsp Butter, cubed,

For Garnish
Coriander sprig,
Butter, cubed,
dry Fenugreek leaves, crushed,

Process
For Chicken Marination
In a bowl, add chicken, curd, ginger garlic paste, salt to taste, turmeric powder, degi red chili powder and mix it well.
Keep it aside to marinate for 10-15 minutes.

For Boiling
In a handi, add water, salt to taste, ghee, onions, green chillies, garlic, cashew nuts, sugar and give it a quick.
Strain the excess water, transfer it to a mixer grinder jar and grind it smoothly.
Keep it aside for further use.

For Sauteing Chicken
In a pan, add oil, once it's hot, add marinated chicken pieces and saute it for 3-4 minutes on both sides until tender.
Transfer it to a bowl or tray and keep it aside for further use.

For Chicken Lazeez
In the same handi, add oil, ghee, once it's hot, add bay leaf, green cardamom, black cardamom and let it splutter.
Add prepared paste, ginger garlic paste and saute it for a while.
Add coriander powder, turmeric powder, degi chili powder, ghee and mix it well.
Add curd, black peppercorns crushed and cook it well.
Add fresh tomato puree, green chili, tender coriander stems and give it a good mix.
Cover it with a lid and allow it to cook for 5-6 minutes on medium flames.
Add water to adjust the consistency, add ghee, sauteed chicken, sugar and cook it for 7-8 minutes on medium flames.
Finish it with dry fenugreek leaves, butter and mix it well.
Transfer it to a serving bowl or dish, garnish it with coriander sprig, butter and dry fenugreek leaves.
Serve hot with roti or rice.
