CHICKEN TIKKA THAI STYLEIngredients350 grams boneless chicken legs, cut into 2 inch pieces2 tbsps Thai red curry paste3 tbsps coconut milkSalt to taste2 tsps olive oilButter for bastingTossed salad to serveFried peanuts to serveLemon wedges to serveMethod1. Heat sufficient coal in a barbeque.2. In a bowl, add chicken pieces, Thai red curry paste and mix well. Add coconut milk, salt, and mix well. Add olive oil to the chicken mixture and mix well.3. Skewer the chicken pieces onto skewers and place on the barbeque. Rotate and baste with butter till cooked completely.4.
