Chicken tikka inspired from the flavours of Thailand.

CHICKEN TIKKA THAI STYLE

Ingredients

350 grams boneless chicken legs, cut into 2 inch pieces
2 tbsps Thai red curry paste
3 tbsps coconut milk
Salt to taste
2 tsps olive oil
Butter for basting
Tossed salad to serve
Fried peanuts to serve
Lemon wedges to serve

Method

1. Heat sufficient coal in a barbeque.
2. In a bowl, add chicken pieces, Thai red curry paste and mix well. Add coconut milk, salt, and mix well. Add olive oil to the chicken mixture and mix well.
3. Skewer the chicken pieces onto skewers and place on the barbeque. Rotate and baste with butter till cooked completely.
4. Serve hot with salad, fried peanuts and lemon wedges.
