Chicken Veggie Wrap | Sanjeev Kapoor Khazana

Tortilla wraps stuffed with shredded vegetables and chicken. A wholesome snack by itself.

CHICKEN VEGGIE WRAP

Ingredients

4 tortillas, roasted
2 boneless chicken breasts
2 tablespoons olive oil + for grilling
Salt to taste
Crushed black peppercorns to taste
2 teaspoons dried mixed herbs
Few Iceberg lettuce leaves, shredded
Mayonnaise for drizzling
Shredded purple cabbage as required
1 small cucumber, peeled and cut into thin slices
2-3 pickles gherkins, thinly sliced
2-3 pickled jalapenos, sliced
1 medium avocado

Method

1. Put chicken breasts in a bowl. Add olive oil, salt, crushed peppercorns and mixed herbs, rub well and set aside to marinate for 10-15 minutes.
2. Heat some olive oil in a non-stick grill pan. Place marinated chicken breasts on it and grill till evenly done form both the sides and chicken is cooked. Remove from heat and shred.
3. Put some shredded lettuce onto tortillas. Top with a portion of shredded chicken and drizzle some mayonnaise.
4. Top with cabbage, cucumber slices, gherkin slices and jalapeno slices. Sprinkle salt and crushed peppercorns.
5. Halve avocado, scoop out flesh and place on each tortilla. Drizzle some more mayonnaise on top.
6. Warp and serve immediately.
