Tortilla wraps stuffed with shredded vegetables and chicken. A wholesome snack by itself.CHICKEN VEGGIE WRAPIngredients4 tortillas, roasted 2 boneless chicken breasts2 tablespoons olive oil + for grilling Salt to tasteCrushed black peppercorns to taste2 teaspoons dried mixed herbsFew Iceberg lettuce leaves, shreddedMayonnaise for drizzling Shredded purple cabbage as required1 small cucumber, peeled and cut into thin slices2-3 pickles gherkins, thinly sliced2-3 pickled jalapenos, sliced1 medium avocadoMethod1. Put chicken breasts in a bowl. Add olive oil, salt, crushed peppercorns and mixed herbs, rub well and set aside to marinate for 10-15 minutes. 2. Heat some olive oil in a non-stick grill pan. Place marinated chicken breasts on it and grill till evenly done form both the sides and chicken is cooked. Remove from heat and shred. 3. Put some shredded lettuce onto tortillas. Top with a portion of shredded chicken and drizzle some mayonnaise. 4. Top with cabbage, cucumber slices, gherkin slices and jalapeno slices. Sprinkle salt and crushed peppercorns. 5. Halve avocado, scoop out flesh and place on each tortilla. Drizzle some more mayonnaise on top.6. Warp and serve immediately.
