A popular recipe from the Assamese cuisine.CHICKEN WITH BAMBOO SHOOTIngredients200 grams boneless chicken, cut into ½ inch cubes2 tbsps chopped bamboo shoot2 tsps coarsely blended mixture of 4 garlic cloves and 3 dry red chillies1 medium tomato, concassed and blanched1 ghost chilli (bhoot jalokia)1-2 drops mustard oilSteamed rice to serveMethod1. Cover and boil 2 glasses of water in a deep non-stick pan.2. Add garlic chilli mixture. Peel and chop a blanched tomato and add in pan. Mix well. Add chicken. Combine well. Add salt. Cover and cook on medium heat for 10 minutes.3. Add bamboo shoot, slice and add 2-3 slices of bhoot jalokia. Add mustard oil. Cover and cook on medium heat for 2 minutes. Switch off heat.4. Transfer prepared dish on a serving bowl.5. Serve hot garnished with a flower made of remaining part of the bhoot jalokia chilli.
