Chilli Garlic Salmon With Ginger Spaghetti | Valentine Special | Sanjeev Kapoor Khazana

A delicious recipe for a fancy lunch or dinner.
CHILLI GARLIC SALMON WITH GINGER SPAGHETTI

Ingredients

4 small salmon fillets
Salt to taste
Crushed black peppercorns
4 tsps chopped garlic
4 fresh red chillies, chopped
4 tsps chopped parsley
1 lemon
2 tbsps olive oil
2 tbsps butter
8 asparagus stalks
4-6 yellow cherry tomatoes, halved
6-8 red cherry tomatoes, halved
Micro greens for garnish
Ginger spaghetti
400 grams boiled spaghetti
3 tbsps olive oil
1 inch ginger, sliced
Salt to taste
Crushed black peppercorns to taste
100 grams parmesan block
Saffron sauce
2 tbsps butter
A generous pinch of saffron
1 cup fresh cream
Salt to taste
Crushed black peppercorns

Method

1. Place the salmon in a plate, sprinkle salt, crushed black peppercorns and add garlic, fresh red chillies, chopped parsley and squeeze lemon. Drizzle olive oil and rub the spices well on both sides of the fillets. Set aside for 15-20 minutes.
2. For the spaghetti, heat oil in a non-stick wok, add ginger and sauté for 30 seconds. Add spaghetti, salt, crushed black peppercorns and toss well.
3. Add chopped parsley and toss well. Cook for 1 minute and grate parmesan cheese directly on it. Mix well and take it off the heat.
4. For the sauce, heat butter in a non-stick pan, add saffron and sauté well for a few seconds.
5. Add fresh cream and mix well. Cook for 1 minute, constantly stirring. Add salt, crushed black peppercorns and mix well.
6. Add a little water to adjust the consistency. Cook the sauce for 1 minute and take it off the heat.
7. For the grilled salmon, heat butter in a non-stick grill pan, place the marinated fillets on it along with asparagus on the side.
8. Cook the fish for 3-4 minutes on each side and cook the asparagus for 2-3 minutes or till the grill marks appear.
9. Add in the cherry tomatoes while the fish is cooking and grill them for 1-2 minutes. Srpinkle salt and crushed black peppercorns on tomatoes and asparagus.
10. For serving, place the cooked fish along with the asparagus and cherry tomatoes on a serving plate. Place the prepared spaghetti and drizzle over the prepared sauce.
11. Garnish with micro greens and serve hot.
