Chilli Oyster Noodles | Sanjeev Kapoor Khazana

A delicious and flavourful Noodle recipe to make an interesting dinner.

CHILLI OYSTER NOODLES

Ingredients

1½ cups boiled noodles
1½ tbsps oyster sauce
2 dried red chillies
2-3 fresh red chillies, chopped
3 tbsps oil
1 tbsp chopped garlic
½ tbsp chopped ginger
2-3 spring onion bulbs, chopped
7-8 button mushrooms, quartered
½ small green capsicum, cut into triangles
½ small red capsicum, cut into triangles
10-12 broccoli florets, blanched
1 medium carrot peeled, sliced, cut into half and blanched
250 grams chicken breast, cut into strips
Salt to taste
Crushed black peppercorns to taste
½ tbsp soy sauce
Sliced spring onion greens for garnish

Method

1. Heat 2 tbsps oil in a non-stick pan; add dried red chillies, garlic and ginger, sauté well. Add spring onion bulbs and sauté for 1 minute.
2. Add mushrooms, green capsicum, red capsicum, broccoli and carrots, sauté well for 1-2 minutes.
3. Make a well in the center and add remaining oil, chicken, salt and crushed black peppercorns, toss well on high heat for 3-4 minutes.
4. Add noodles, oyster sauce and soy sauce, toss well and cook for 2-3 minutes.
5. Garnish with spring onion greens and serve hot.
