Deep fried potato fingers tossed in spicy schezwan sauce.CHILLI POTATOESIngredients 2 cups potato fingers½ cup cornflour1 tbsp oil1 tbsp chopped garlic1 tbsp chopped ginger1 tbsp chopped celery2 tbsps finely chopped carrots1 tbsp soy sauceCrushed black peppercorns to tasteSalt to taste¼ cup Schezwan sauce1 tbsp refined flour slurry1 tbsp sliced spring onion greensMethod 1. Mix together potato fingers and cornflour in a bowl. Set aside. 2. Heat sufficient oil in a kadai for deep-frying. 3. Deep-fry the potato fingers till golden and crisp. Drain on absorbent paper4. Heat oil in a non-stick pan, add garlic, ginger, celery, carrot, soy sauce, crushed black peppercorns, salt and schezwan sauce. Mix well. 5. Add some water, give a good stir.
