So surprise your taste buds with a healthy twist.CHIMICHURRI BLACK BEAN SALADIngredients cup boiled black bean1 cup fresh flat parsley leaves5-6 sprigs of fresh oreganos10-15 garlic cloves1 tbsp red wine vinegar cup extra virgin olive oil1 tsp dried red chilli flakesCrushed black peppercorns to tasteSalt to taste2 cups assorted lettuce leaves, torn into small pieces cup boiled sweet corn kernels5-6 assorted baby tomatoes, halvedMethod1. To make the chimichurri dressing, Put the parsley leaves in a food processor, pluck the leaves of the oregano and add into it along with garlic cloves, red wine vinegar, extra virgin olive oil, red chilli flakes, crushed black peppercorns, salt and process to a coarse paste. 2. Take lettuce leaves in a large bowl, add sweet corn kernels, boiled black bean, crushed black peppercorns, assorted baby tomatoes and drizzle some of the chimichurri dressing and gently mix till well combined. 3. Transfer the salad in a serving plate, serve immediately with the remaining dressing.
