Add thin juliennes of carrot, Chinese cabbage, cucumber, tomato, bell pepper and spring onions. Toss the vegetables well with the sugar-vinegar dressing and keep aside. 4.Heat oil in a pan and when the oil is hot, carefully drop in the cornflour coated fish and fry on both sides until the fish is golden in color and crisp. 5.For making the sauce, take little oil in a pan and when the oil is hot, add in some finely chopped ginger and garlic. Fry well till you get a nice colour. 6.Add chilli paste, chilli sauce, tomato ketchup, green chilli sauce, soya sauce, sugar, crushed pepper corns, fish sauce, and vinegar. Mix the sauces and add little water to adjust the consistency. 7.Remove the fried fish and just dip it in the sauce on one side, remove and arrange it over the bed of salad.
