Rice and vegetables cooked in a clay pot in Chinese styleCHINESE STYLE VEGETABLE CLAY POT RICE Ingredients1 cup short grained rice, soaked2 tbsps olive oil2 medium onions2 medium carrots1½ tbsps grated ginger1½ tbsps grated garlic1 tsp soy sauce3 cups vegetable stock½ tsp black pepper powder1 tsp sesame oilMethod1. Heat 2 tbsps olive oil in a pan. Roughly chop onions and add and saute.2. Cut carrots into medium sized pieces and add. Add ginger and garlic and saute.3. Add soy sauce and vegetable stock and mix. Drain and add rice and pepper powder and mix. Cover and cook on low heat till half done.4. Transfer the mixture into a claypot. Add sesame oil.
