Cilantro Lime Rice

Cilantro
Lime
Basmati Rice
Salt

Sour Cream
Jack Cheese
Cheddar Cheese
Tortilla
Chicken
Bacon Pinto Beans
Rosted Poblano Pepper Corn Salsa
Spicy Salsa
Guacamole

- Measure rice 1 cup of rice : 2 cups of water. Sprinkle salt and bring to a boil. Once boiled turn to summer or low and cover 15-20 minutes. Remove rice and mix in a bowl to cool. Mix in cilantro and juice from 1 1/2 limes. To make sour cream whisk sour cream till smooth. Finley grate jack and cheddar cheese (freeze your cheese or use very cold cheese). To steam your tortilla fold it and place in a damp paper towel, microwave for 30 seconds. Top tortilla with Chicken, cilantro rice, bacon pinto beans, spicy salsa, roasted poblano corn salsa, sour cream, cheese. and guacamole. Fold and roll, cover with foil.
