Chocolate cookies made interesting with the addition of crunchy pecan nuts. Bake & enjoy!

CHOCOLATE AND PECAN COOKIES

Ingredients

½ cup chopped dark chocolate
10-15 pecan nuts + for topping
¾ cup butter, softened
¾ cup castor sugar
1 egg
1 tsp vanilla essence
¾ cup refined flour (maida)
¼ cup cocoa powder
1 tsp baking powder


Method

1. Take butter in a large bowl, add sugar and cream with a back of a wooden spoon till the sugar melts. Break in the egg and add the vanilla essence and whisk well.
2. Add refined flour, cocoa powder and baking powder and gently mix till the mixture comes together.
3. Roughly chop pecan nuts and add into the prepared mixture and gently mix till well combined.
4. Add the chocolate and mix.
5. Divide the mixture into equal portions and shape each portion into a ball. Gently flatten it to shape it like a cookie and place each cookie on a baking tray at equidistance. Place the tray in the refrigerator for 10-15 minutes.
6. Place a few pecan nuts halves on top of each cookie.
7. Meanwhile, preheat the oven at 180ºC.
8. Place the baking tray in the oven and bake for 10-15 minutes.
9. Remove the cookies from the oven and allow to cool to room temperature. Serve as required.
