The video first takes you through how to melt the chocolate over a Bain-marie at 55-60ºc, and then it shows you how to whisk your egg whites in to a stable foam to stop them from splitting later on (this will make your chocolate mousse much more stable). Then it goes through detailed steps to make the chocolate base, lastly you will see how to fold all the ingredients together delicately, which will make a light, airy, creamy and chocolaty, chocolate mousse.
