Chooda Matar | Sanjeev Kapoor Khazana

A winter delicacy snack recipe of pressed rice cooked with fresh green peas.

CHOODA MATAR

Ingredients

1½ cups pressed rice (poha/chooda)
½ cup green peas (matar), boiled
2 tablespoons ghee
2 bay leaves
1 teaspoon cumin seeds (jeera)
1-2 green chillies, finely chopped
1 teaspoon finely chopped ginger
12-14 cashewnuts, halved
Salt to taste
1 teaspoon garam masala powder
Nylon sev for sprinkling

Method

1. Soak pressed rice in sufficient water. Squeeze and set aside.
2. Heat ghee in a non-stick pan. Add bay leaves and cumin seeds, mix and sauté till the seeds change colour.
3. Add green chillies and ginger, mix and sauté for a minute. Add cashewnuts and mix well.
4. Add green peas, mix and cook for a minute. Add salt and toss well. Add garam masala powder and mix well.
5. Discard bay leaves, add pressed rice, mix well and let it get heated through.
6. Sprinkle sev on top and serve hot.
