Chorizo Velveeta Queso Fundido Nacho Cheese Dip Super Bowl Ready | Glen And Friends Cooking

October 17, 2018… Pot is legal, and Canada needs a snack! So we’ve simplified a super simple nacho cheese dip (Queso Fundido) with Chorizo and Velveeta. Super Bowl Snacks here we come!

Ingredients:
225g (8 ounce) fresh Mexican chorizo sausage
60 mL (¼ cup) jalapeño pickle juice
3 green onions, sliced
1-2 jalapeño peppers, sliced
450g (16 ounce) Velveeta ‘cheese’
125 mL (½ cup) milk
125 mL (½ cup) salsa



Method:

Remove the casing from the sausages and fry in a heavy bottomed pan over med-high heat.
Break up the sausage into small bits as it fries.
Add the jalapeño pickle juice if you have it.
Add the onions, and jalapeño peppers - cook until soft.
reduce heat to med-low
Cut the Velveeta into chunks, and throw into the pan.
Stirring over low heat, melt the Velveeta.
Add the milk, and continue stirring.
Add the salsa, stir in and serve.

***If you don’t have fresh jalapeños - use pickled.
Play with the spices, add cumin, cayenne, etc.
