CHUR CHUR PARANTHA

Ingredients

1 cup refined flour + for dusting
½ cup rice flour
1 teaspoon garam masala
1 teaspoon coriander powder
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon cumin powder
Salt to taste
2 tablespoons ghee + for brushing

Method

1. Mix together refined flour, rice flour, garam masala powder, coriander powder, turmeric powder, chilli powder, cumin powder and salt in a bowl.
2. Make a well and add ghee. Mix together using fingertips. Add water as required and knead a soft dough. Cover with a moist muslin cloth and set aside for 10-15 minutes.
3. Divide dough in equal portions, dust flour on worktop and roll into discs. Brush ghee on top and dust some flour again.
4. Fold the rolled disc like a fan and then shape it round. Flatten out and roll into disc again.
5. Cook the paratha on a non-stick tawa till golden brown, brushing ghee on both sides.
6. Serve hot.
