The coconut undertone is easily identified and it blends in beautifully and invigorates your palette!COCONUT BARFI - (Serves - 4)Ingredients2 cups scraped fresh coconutGhee for greasing 1 cup sugar½ cup fresh creamA pinch green cardamom powder2-3 tablespoons chopped pistachios2 tablespoons powdered sugarSilver varq for garnishing Pistachio powder for sprinkling Method 1. Grease a barfi tray with some ghee. 2. Heat a non-stick pan. Add coconut, sugar, cream and cardamom powder, mix and sauté till the mixture turns golden brown. 3. Add chopped pistachios and mix well. Switch off heat, add powdered sugar and mix well.4. Spread the mixture in the greased tray, garnish with silver varq, sprinkle some pistachio powder on top and set aside to cool. 5.
