Coconut Barfi | Sanjeev Kapoor Khazana

Coconut barfi is a traditional indian dessert that tastes like magic. The coconut undertone is easily identified and it blends in beautifully and invigorates your palette!

COCONUT BARFI - (Serves - 4)

Ingredients

2 cups scraped fresh coconut
Ghee for greasing
1 cup sugar
½ cup fresh cream
A pinch green cardamom powder
2-3 tablespoons chopped pistachios
2 tablespoons powdered sugar
Silver varq for garnishing
Pistachio powder for sprinkling

Method

1. Grease a barfi tray with some ghee.
2. Heat a non-stick pan. Add coconut, sugar, cream and cardamom powder, mix and sauté till the mixture turns golden brown.
3. Add chopped pistachios and mix well. Switch off heat, add powdered sugar and mix well.
4. Spread the mixture in the greased tray, garnish with silver varq, sprinkle some pistachio powder on top and set aside to cool.
5. Cut into squares and serve.
