Perfect to beat the heat.COCONUT KULFIIngredients6 tbsps coconut milk powder1 cup tender coconut flesh2 tsps grated fresh coconut1 litre milk4 tbsps grated khoya1 cup sugarMethod1. Heat milk in a deep non-stick pan. Add coconut milk powder, mix well and let it reduce.2. Add khoya, mix well and cook till it thickens.3. Place coconut flesh in a grinder jar and grind finely.4. Add ground coconut flesh to the pan and mix well. Add grated coconut and mix well.5. Add sugar, mix well and cook till the sugar melts. Switch off heat and cool to room temperature.6. Pour into aluminium kulfi moulds, cover with the lid and freeze till set.7. Serve.
