Cold Lemon Souffle | Sanjeev Kapoor Khazana

This delicious souffle is the perfect dessert to end your yummy dinner.

COLD LEMON SOUFFLE

Ingredients

2 teaspoon gelatine
1 cup castor sugar
2 egg yolks
½ teaspoon vanilla essence
½ teaspoon lemon rind
Juice of 1 lemon
1 cup whipped cream

Method

1. In a bowl, add 6 tablespoons water and mix gelatine with it little by little.
2. Cream together egg yolk, sugar and vanilla essence in another bowl over a double boiler. Remove from heat and fold till well incorporated.
3. Melt the soaked gelatine and add with lemon rind and lemon juice to the yolk mixture.
4. Beat the yolk mixture over the double-boiler with an electric blender. Add whipped cream and fold till well incorporated. Add some more whipped cream and fold once again to a smooth paste.
5. Line the rim of a soufflé dish with butter paper and fill it with soufflé.
6. Refrigerate overnight.
