COUSCOUS WITH CARROTS RECIPE - Simple and Delicious Meal

In this episode, I'd like to share with you a very simple yet amazingly delicious recipe. I used couscous this time but you can also use risoni pasta. I cook this dish in a large batch so we have enough for seconds and next-day leftovers. We like to call it "orange pasta" :) Hope you give it a try!

INGREDIENTS
2 cups couscous
8 carrots
4 cups water
1/3 cup olive oil
A pinch of granulated sugar
Salt & black pepper

DIRECTIONS
Peel the carrots, cut both ends and rinse.
Grate them or place in bowl of a blender then pulse several times.
Heat the olive oil in a large pan.
Add the carrots.
Sprinkle a pinch of sugar and salt, then saute for 6-7 minutes over medium heat, stirring occasionally.
Add the couscous, sprinkle 1 tsp or to taste salt, mix well.
Add the water, mix well and bring to a boil over medium high heat, stirring occasionally.
Adjust seasoning and mix.
Then reduce heat to medium low and cover.
Cook for 15-20 minutes or until all the water is absorbed.
Check for doneness then turn off the heat.
Mix well gently.
Cover with paper towels then the lid and let rest for about 10 minutes, serve hot.
