This year, savour the festival with my delectable Thandai Mousse - a recipe that's super easy to make and lip-smackingly delicious!

THANDAI MOUSSE

Ingredients:

*For Thandai Paste*
Milk () 500ml
Fennel Seeds () tbsp
Cardamom () 5 nos
Cinnamon, 1 piece () 1 no
Peppercorns ( ) 5 nos
Nutmeg Powder () tsp
Pista () 10-12 nos
Cashew nuts () 6-8 nos
Almonds () 6-8 nos nos
Khus Khus ( ) 1 tbsp
Watermelon seeds () 1 tbsp
Melon seeds ( ) 1 tbsp
Sugar () cup
Saffron, soaked () a generous pinch
Rose Water ( ) 1 tbsp


*For Mousse*
Whipping cream ( ) 1 cup/200 ml
White chocolate ( ) 175 gms/1 cup
Yellow Food colour ( ) few drops

*For Crumble*
All Purpose Flour ()- 150 gms/1 cup+2 tbsp
Butter () 100gms/7 tbsp
Vanilla extract ( ) few drops
Sugar powdered () 85 gms/ cup + 2 tbsp
