Creamy Cajun Potatoes | Sanjeev Kapoor Khazana

Creamy, scrumptious and utterly delectable, these Cajun Potatoes are a relatively easy recipe to make. These can be made without any hassle and are best served hot.

CREAMY CAJUN POTATOES

Ingredients

10-12 baby potatoes, parboiled with skin
Oil for deep-frying
2 tablespoons mayonnaise
1 teaspoon dried oregano
1 teaspoon dried chilli flakes
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt to taste
Finely chopped onion for garnishing
Finely chopped parsley for garnishing

Method

1. Lightly press baby potatoes between palms, place on a plate and set aside.
2. Heat sufficient oil in a pan. Deep-fry baby potatoes till golden-brown. Drain on absorbent paper.
3. Heat mayonnaise in another non-stick pan. Add oregano, chilli flakes, basil, parsley, thyme, garlic powder, onion powder, paprika powder, salt and mix well. Add 2 tablespoons water and mix once again.
4. Add fried baby potatoes, mix and remove from heat.
5. Serve hot garnished with chopped onions and parsley.
