CREAMY CAJUN POTATOESIngredients10-12 baby potatoes, parboiled with skinOil for deep-frying2 tablespoons mayonnaise 1 teaspoon dried oregano1 teaspoon dried chilli flakes1 teaspoon dried basil 1 teaspoon dried parsley1 teaspoon dried thyme1 teaspoon garlic powder1 teaspoon onion powder1 teaspoon paprika Salt to tasteFinely chopped onion for garnishingFinely chopped parsley for garnishingMethod1. Lightly press baby potatoes between palms, place on a plate and set aside. 2. Heat sufficient oil in a pan. Deep-fry baby potatoes till golden-brown. Drain on absorbent paper. 3. Heat mayonnaise in another non-stick pan. Add oregano, chilli flakes, basil, parsley, thyme, garlic powder, onion powder, paprika powder, salt and mix well. Add 2 tablespoons water and mix once again. 4. Add fried baby potatoes, mix and remove from heat. 5. Serve hot garnished with chopped onions and parsley.
