Crepe Cake | Christmas Special | Sanjeev Kapoor Khazana

A quick and easy cake recipe made with layered crepes along with a delicious icing.

CREPE CAKE

Ingredients

1¼ cups refined flour
1 cup cream cheese
2 cups whipped cream
1½ cups milk
3 eggs
4 tbsps melted butter + for greasing
¼ cup powdered sugar
3½ tbsps castor sugar
2 tsps vanilla essence
3 tsps edible red food colour
Strawberries for garnish
Blueberries for garnish
Icing sugar for garnish

Method

1. In a bowl, sieve refined flour. Add sugar, break eggs one at a time. Add vanilla essence, edible red colour. Mix well.
2. Add milk gradually and whisk until the batter is smooth. Add melted butter, gently mix till well in cooperated.
3. Heat 1 tsp butter in a non-stick pan, add 1/8th cup of batter and swirl the pan. Cook for 30 seconds and flip it and cook the other side for another 30 seconds. Lightly transfer to a plate using a palate knife.
4. Similarly, continue to make more using the rest of the batter. Keep the prepared crepes aside to cool.
5. For the frosting, in a bowl, add the cream cheese and powdered sugar, whisk till smooth and lump free. Add ¼ cup whipped cream, gently fold it in. Add the remaining whipped cream and mix it.Transfer the mix in a piping bag.
6. Apply the frosting on the serving plate, keep one crepe and spread the frosting evenly, place another crepe on top.
7. Again, apply the frosting evenly and repeat the process for the rest of the crepes.
8. Dust icing sugar and garnish with strawberries and blueberries. Slice and serve.
