Crispy Baked Chicken - In Air fryer or Oven + Healthy Veggie Bulgur & Yogurt Salad

I am making an easy and healthy crispy chicken you can bake in the air fryer or oven, or even fry on stove-top with less oil. The marinade sauce of the chicken make it so tender and delicious. I used corn flakes but you can also use bread crumbs to coat. I am completing the menu with veggie bulgur pilaf and a creamy yogurt purslane salad with cucumbers and mint.

Ingredients for the crispy baked chicken
about 500gr. chicken breasts
for the marinade:
1 egg
1/4 cup milk
1/3 cup natural mineral water + 1-2 tbsp more if needed
2-3 tbsp flour
tsp of salt, paprika, curry
2 cloves of crushed garlic
For the coating about 1 cup crushed corn flakes or mix of corn flakes and bread crumbs
to brush the top of the chicken pieces: about 1/3 cup vegetable oil

For the bulgur pilaf
1 medium-size onion
1 eggplant
2 medium-size carrots
2-3 green peppers
2 medium size ripe tomatoes or tomato pure
1 tsp heaped each tomato and pepper paste (use only tomato if you can't find)
about 5 tbsp olive oil (you can use mix of olive oil and butter if you prefer)
1+1/2 tsp or to taste salt
1/2 tsp black pepper, pul biber (chili flakes)
2 cups coarse bulgur
little less then 4 cups hot water, or chicken broth or vegetable stock
