A must try recipe !CRISPY CHESTNUTSIngredients1 cup canned chestnuts1 tsp oil + for deep-frying2 tsps cornstarch2 tsps refined flourSalt to taste1 tsp soy sauce4 tbsps sweet red chilli sauce1½ tsps red chilli powder4 spring onion with greens2 tsps finely chopped ginger2 tsps finely chopped garlicMethod1. Heat sufficient oil in a kadai.2. Take chestnuts into a bowl. Add cornstarch, refined flour, salt, soy sauce, 1 tbsp red chilli sauce and ½ tsp red chilli powder and mix well.3. Deep-fry chestnuts in hot oil till golden and crisp.4. Heat 1 tsp oil in a non-stick wok. 5. Cut spring onion bulbs into roundels. Reserve the greens.6. Add the spring onion bulb roundels, ginger and garlic to the wok and saute well.7. Add remaining red chilli sauce and remaining red chilli powder, mix well and cook for 2 minutes.8. Cut reserved spring onion greens into roundels.9. Add fried chestnuts to the wok, toss to mix and cook for a minute.10. Serve hot garnished with spring onion green roundels.
