Crispy Chestnuts | Cooksmart | Sanjeev Kapoor Khazana

Deep fried crispy chestnuts tossed in spicy sauce. A must try recipe !

CRISPY CHESTNUTS

Ingredients

1 cup canned chestnuts
1 tsp oil + for deep-frying
2 tsps cornstarch
2 tsps refined flour
Salt to taste
1 tsp soy sauce
4 tbsps sweet red chilli sauce
1½ tsps red chilli powder
4 spring onion with greens
2 tsps finely chopped ginger
2 tsps finely chopped garlic

Method

1. Heat sufficient oil in a kadai.
2. Take chestnuts into a bowl. Add cornstarch, refined flour, salt, soy sauce, 1 tbsp red chilli sauce and ½ tsp red chilli powder and mix well.
3. Deep-fry chestnuts in hot oil till golden and crisp.
4. Heat 1 tsp oil in a non-stick wok.
5. Cut spring onion bulbs into roundels. Reserve the greens.
6. Add the spring onion bulb roundels, ginger and garlic to the wok and saute well.
7. Add remaining red chilli sauce and remaining red chilli powder, mix well and cook for 2 minutes.
8. Cut reserved spring onion greens into roundels.
9. Add fried chestnuts to the wok, toss to mix and cook for a minute.
10. Serve hot garnished with spring onion green roundels.
