CRISPY CHILLI BABY CORN

Ingredients

1-2 green chillies, diagonally sliced
10-12 baby corns, halved lengthwise
1 cup refined flour
½ cup corn flour
Crushed black peppercorns to taste
½ tsp paprika powder
1½ tbsps oil + for deep frying
1 tbsp finely chopped garlic
½ tbsp finely chopped ginger
½ cup tomato ketchup
½ tbsp soy sauce
1 medium onion, diced into 1 inch pieces
½ cup mixed coloured capsicum dices
2 tbsps finely chopped spring onions greens
1 tbsp lemon juice
2 tsps toasted white sesame seeds + for garnish
Thinly sliced spring onion greens for garnish

Method

1. Take refined flour, corn starch, salt, crushed black peppercorns, paprika powder and sufficient water and mix well to form a thick batter of coating consistency.
2. Add baby corns and mix till they are well coated with the batter.
3. Heat sufficient oil in a kadai, drop in the baby corns and deep fry till golden brown and crisp. Drain on an absorbent paper.
4. Heat 1½ tbsps oil in a non-stick wok, add garlic and mix well. Add ginger, green chillies and sauté for a few seconds.
5. Add tomato ketchup, soy sauce and mix well.
6. Add onions, capsicums and mix. Add fried baby corns and toss well.
7. Add 1½ tbsps spring onion greens, crushed black peppercorns, salt and lemon juice and toss well.
8. Add sesame seeds and remaining spring onion greens and mix well. Take the pan off the heat.
9. Transfer into a serving bowl, garnish with sesame seeds and sliced spring onion greens. Serve hot.
