The go-to starter to your heavy meals, you can make them easily at home with this perfect recipe!CRISPY CHILLI BABY CORNIngredients1-2 green chillies, diagonally sliced10-12 baby corns, halved lengthwise1 cup refined flour½ cup corn flourCrushed black peppercorns to taste½ tsp paprika powder1½ tbsps oil + for deep frying1 tbsp finely chopped garlic½ tbsp finely chopped ginger½ cup tomato ketchup½ tbsp soy sauce1 medium onion, diced into 1 inch pieces½ cup mixed coloured capsicum dices2 tbsps finely chopped spring onions greens1 tbsp lemon juice2 tsps toasted white sesame seeds + for garnishThinly sliced spring onion greens for garnishMethod1. Take refined flour, corn starch, salt, crushed black peppercorns, paprika powder and sufficient water and mix well to form a thick batter of coating consistency.2. Add baby corns and mix till they are well coated with the batter.3. Heat sufficient oil in a kadai, drop in the baby corns and deep fry till golden brown and crisp. Drain on an absorbent paper.4. Heat 1½ tbsps oil in a non-stick wok, add garlic and mix well. Add ginger, green chillies and sauté for a few seconds.5. Add tomato ketchup, soy sauce and mix well.6. Add onions, capsicums and mix. Add fried baby corns and toss well.7. Add 1½ tbsps spring onion greens, crushed black peppercorns, salt and lemon juice and toss well.8. Add sesame seeds and remaining spring onion greens and mix well. Take the pan off the heat.9. Transfer into a serving bowl, garnish with sesame seeds and sliced spring onion greens.
