Bhindi or Okra can be made with many variations say Onions, potatoes, etc. during summers its best to add yogurt.

Ingredients

Oil - 2 Tbsp
Asafoetida - 1/4 tsp
Mustard Seeds - 1/2 tsp
Cumin Seeds - 1/2 tsp
Curry Leaves - 10-12
Green chilli Chopped - 1 tsp
Ginger Chopped - 1 tsp
Garlic Chopped - 1 tsp
Onion Cubes - 1 large
Okra - 150 gms
Potato cubes - 2 large
Turmeric powder- 1/4 tsp
Red Chili powder - 1/2 tsp
Coriander powder - 1 tsp
Garam Masala powder - 1/2 tsp
Salt to taste
Tomato cubes - 1 large
Coriander Chopped - 1 Tbsp
Yogurt- 1 cup

Method:
1. Add oil in a heating pan.
2. Add Asafoetida, mustered seeds, cumin seeds,
and as the cumin and mustered seeds crackle, add Curry leaves, Green chillies, ginger and garlic
3. Add onions, okra and potatoes.
4. Saute for 5 to 6 mins for everything to cook.
5.Add spices turmeric powder, red chilli powder, coriander powder, salt, garam masala, and mix it well.
6. Add tomatoes, coriander,
close the induction.
7. whisk the yogurt and add the yogurt while serving.
8. Add mint leaves to garnish.
