Dahi Vada Chaat | Sanjeev Kapoor Khazana

Freshly made deep fried vadas topped with chopped onion tomatoes, sweetened curd and chutneys to make this lip smacking chaat.

DAHI VADA CHAAT

Ingredients

2 cups split skinless black gram (urad dal), soaked and drained
2 green chillies, broken
1 inch ginger, roughly chopped
Salt to taste
Oil for deep-frying
Yogurt as required
1 large onion, finely chopped
1 large tomato, finely chopped
2 tablespoons green chutney
2 tablespoons tamarind chutney
Chopped fresh coriander leaves as required
A pinch red chilli powder
A pinch chaat masala

Method

1. Blend together black gram, green chillies and ginger to a fine paste. Transfer in a bowl, add salt and mix well.
2. Heat sufficient oil in a kadai. Drop small portions of the mixture in it and deep-fry till golden brown. Drain on absorbent paper.
3. Break vadas into small pieces and place on a serving platter. Top with some yogurt, onions and tomatoes. Drizzle green chutney and tamarind chutney and sprinkle some coriander leaves. Top with some more yogurt, coriander leaves, chilli powder and chaat masala.
4. Serve immediately.
