5 TYPES OF DAL TADKA (PART 2)

Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Cooking Chana Dal
3 cups Chana dal (soak for 2-3 hrs)
1 tbsp Ghee,
2 no. Green chillies (less spicy, broken into half)
6 cups water,
Salt to taste,
2 tsp Turmeric powder,
1 tbsp Prepared Ginger Garlic paste,

For Ginger Garlic Paste
1 inch Ginger, peeled,
6-7 no. Garlic cloves,
Salt to taste,

For Cooking Toor dal and Moong dal
5-6 cups water,
1 cups Toor dal, washed,
cup Moong dal, washed,
Salt to taste,
1 tsp Turmeric powder,
1 tsp Degi Red chili powder,
1 cup Warm water,

For Cooking Rajasthani dal
4 cup water,
1 cup Toor dal, washed,
cup Moong dal chilka, washed,
Salt to taste,
1 tsp Turmeric powder,
1 tsp Degi Red chili powder,

For Rajasthani dal Tadka
1 tbsp Oil,
1 tsp Cumin seeds,
A pinch of asafoetida,
tsp Turmeric powder,
5-4 no. dry Red chilies,
tsp Jaggery,

For Garnish
Coriander sprig,

For Maharashtrian Dal Tadka
1 tbsp Oil,
tsp small Mustard seeds,
2 no. Green chilies, roughly chopped,
2 no. sprig Curry leaves,
1 no. raw Mango, sliced,
tsp Sugar,
Salt to taste,
1 cups Cooked Toor dal & Moong dal,
1 cup water,
1 tbsp Ghee,

For Garnish
Raw Mango, sliced,

For Dhaba Style Dal Tadka
1 tbsp Oil,
tsp Cumin seeds,
1 tbsp Ginger Garlic paste,
medium onion, sliced,
1 tsp Degi red chili powder,
tsp Turmeric powder,
A pinch of asafoetida,
tsp Coriander powder,
medium Tomato, chopped,
cup Water,
1 cups Cooked Toor dal & Moong dal,
2 tbsp Butter, cube,

For Ginger Garlic Paste
1 inch Ginger, peeled,
6-7 no. Garlic cloves,
3 no. Green chilies, spicy,
Salt to taste,

For Garnish
Coriander sprig,
Butter, cubes,
