Restaurant style Dal Tadka made easy at home with this recipe, an aromatic and flavourful tempering in Dal is just what you need to comfort yourself on a hectic work day.DAL TADKAIngredients1 cup split skinless pigeon pea (dhuli toor dal) soaked for 20 minutes and drainedSalt to taste½ tsp asafoetida (hing)½ tsp turmeric powder2 tbsps ghee1 tsp cumin seeds1 tbsp chopped garlic1 medium onion, chopped1 small tomato, chopped½ tsp red chilli powder½ tsp cumin powder1 tsp coriander powderA pinch of garam masala powder2 tbsps chopped fresh coriander + for garnishMethod1. In a pressure cooker add split skinless pigeon pea, salt, ¼ tsp asafoetida and ¼ tsp turmeric powder. Add 2 cups water. Cover and cook till 4 whistles are released.2. Open the cooker once the pressure has reduced completely, mix well and slightly mash the cooked gram mixture. Set aside.3. For the tadka, heat ghee in a non-stick pan, add cumin seeds and let them change colour. Add remaining asafoetida and garlic and sauté till it turns golden brown.4. Add onion and salt. Mix well and sauté till onions turn golden brown.5. Add tomato and sauté well, cover and cook for 3-4 minutes on medium heat or till the tomatoes turn pulpy.6. Add remaining turmeric powder, red chilli powder, cumin powder, coriander powder and garam masala powder and mix well. Add chopped coriander and combine well. Take the pan off the heat.7. Transfer cooked dal in a serving bowl with a ladle. Add prepared tadka mixture on top.
