Upma in a new avatar, made with broken wheat and loads of veggies, this Dalia Upma makes for a healthy and wholesome breakfast.DALIA UPMAIngredients1 cup broken wheat (jada dalia)1½ tbsps ghee1 tsp mustard seeds1 tsp split skinless black gram (dhuli urad dal)2 tsps finely chopped ginger¼ tsp asafoetida (hing)8-10 curry leaves1 medium onion, finely chopped1 small tomato, finely chopped1 small carrot, cut into small cubes¼ cup green peasSalt to taste½ tsp granulated sugar1 tbsp chopped fresh corianderFresh coriander sprigs for garnishMethod1. Heat ½ tbsp ghee in a non-stick wok, add broken wheat and roast on medium heat for 5-6 minutes. Transfer on a plate and set aside.2. Heat remaining ghee in the same wok, add mustard seeds and let them splutter. Add split skinless black gram, ginger, asafoetida and curry leaves and let them splutter.3. Add onion and sauté till translucent. Add tomato, carrot, green peas, salt, sugar and chopped coriander and mix well. Cook for 2-3 minutes.4. Add roasted broken wheat and mix well. Add 2½ cups hot water and mix till well combined. Cover and cook for 6-8 minutes on medium heat or till moisture is absorbed. 5. Take the wok off the heat. Transfer into a serving bowls and garnish with coriander sprig and serve hot.
