Date and Walnut Cake | Cooking with California Walnuts | Sanjeev Kapoor Khazana

The combination of dates and walnuts makes this freshly baked cake extra special.

DATE AND WALNUT CAKE

Ingredients

¼ cup seedless dates, chopped + for sprinkling
¼ cup walnuts, chopped + for sprinkling
1 cup butter
¾ cup castor sugar
3 eggs
2 teaspoons vanilla essence
1 cup refined flour + 2 tablespoons
1 teaspoon baking powder
Salt to taste
¼ cup milk


Method

1. Cream butter and sugar together till light and fluffy.
2. Break in 1 egg at a time and beat till well incorporated.
3. Add vanilla essence and beat again. Sieve in the refined flour along with baking powder. Fold with spatula
4. Add walnuts and dates to a bowl, add 2 tablespoons flour and mix well.
5. Fold in the dry fruits mixture, add milk and mix well to form a lump free batter.
6. Pour the batter into a greased and flour dusted loaf tin, sprinkle dates and walnuts from top.
7. Bake at 180˚C for 35-40 minutes. Slice and serve.
