Lacha kachori
Dough bananay ke ajza:
Maida 3 cup
Namak 1 chaye ka chamach
Ghee 1/4 cup
Pani hasb-e-zarurat

Chicken mixture bananay ke ajza:
Khanay ka tail 3 khanay ka chamach
Chicken keema 300 g
Pyaz (katti hui) 1 cup
Adrak lehsan ka paste 1 khanay ka chamach
Laal mirch powder 1 khanay ka chamach
Zeera powder 1 khanay ka chamach
Dhaniya powder 1 khanay ka chamach
Kutti laal mirch 1 khanay ka chamach
Haldi powder 1 chaye ka chamach
Namak hasb-e zarurat

Lacha kachori bananay ke ajza:
Tayar dough
Tayar chicken mixture
Khanay ka tail
Maida (chiraknay ke liye )
Ghee (brush ke liye) hasb-e-zarurat

Tarkeeb:
1. Dough bananay ke liye aik bowl me maida, namak, ghee or pani daal kar naram gondh len. Ab kapray se dhanp kar 10-15 minutes ke liye side pe rakh den.
2. Chicken mixture bananay ke liye aik pan me khanay ka tail garam kar ke is me chicken ka keema daal kr chicken ka rang badalnay tak pakayen. Ab is me pyaz or adrak lehsan ka paste daal kar 2 3-minute tak pakayen.
3. Ab is me laal mirch powder, zeera powder, dhaniya powder, kutti laal mirchen, haldi powder or namak daal kar 7-10 mins tak pakayen.
4. Ab lacha kachori bananay ke liye dough ko 6 hisson me takseem kar len.
5. Ab aik hissay ka paida bana kar gol bail len or brush se ghee laga den.
6. Phir is par ata daal kar sidon se dough ko andar ki tarf jor len or mustateel shakal bana len.ab dubara brush se ghee lagayen or is pe ata chirken.
7. Aik choti log shakal banatay huway aik tarf se dusri tarf roll kren.ab is log ko darmeyan se dhagay se do hisson me kaat len.
8. Ab aik hissa le kar issay gol shakal me roll kar ke is me chicken mixture daalen or atraf ko jor kar kachori ki shakal de den.
9. Ab tayar kachori ko golden brown honay tak deep fry kar len.
10. Lacha kachori tayar hai.

Ingredients for Dough:
All-purpose flour 3 cups
Salt 1 tsp
Ghee 1/4 cup
Water as required

Ingredients for Chicken Mixture:
Oil 3 tbsp
Chicken mince 300 g
Onion (chopped) 1 cup
Ginger garlic paste 1 tbsp
Red chili powder 1 tbsp
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Red chili flakes 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp / to taste

Ingredients for Lacha Kachori:
Prepared dough
Prepared chicken mixture
Oil (for frying)
All-purpose flour (for sprinkle)
Ghee (for brushing) as required

Directions for Dough Preparation:
1. In a bowl add flour, salt, ghee, water and knead a smooth dough. cover with a cloth and set aside for 10-15 mins.
Directions for Chicken Mixture Preparation:
2. In a pan heat oil and add chicken mince. Cook until chicken changes color.
3. Add onion, ginger garlic paste and cook for 2-3 mins.
4. Now add red chili powder, cumin powder, coriander powder, red chili flakes, turmeric powder, salt and cook for 7-10 mins or until mince is fully done. Set aside.
Directions for Lacha Kachori Preparation:
5. Take the prepared dough and cut it into 6 equal parts.
6. Now take one part and make a dough ball. Roll it out into a flat circle and brush ghee on it.
7. Sprinkle flour on it, fold the sides inwards to make a rectangular shape. Brush ghee again and dust flour on it.
8. Roll from one side to another making a small log shape. Now cut this log from the center with a thread dividing into 2 parts.
9. Take one part, roll out into a flat circle and add chicken mixture to it.
10. Now combine the sides together making a kachori shape.
11. Now deep fry the prepared kachori until crispy and golden brown.
12. Your Lacha Kachori is ready.
