DESI ONION RINGS

Ingredient

4 large onions
1 cup gram flour (Besan)
2 tbsps rice flour
1 tbsp coriander powder
½ tsp cumin powder
½ tsp red chilli powder
¼ tsp turmeric powder
¼ tsp chaat masala powder
Salt to taste
Pinch of baking soda
½ cup refined flour
Vada pav chutney for serving
Oil to deep-fry

Method

1. Heat sufficient oil in a kadai.
2. Peel onion and cut into thick rings, separate the layers, and keep the rings in iced water.
3. Combine gram flour, rice flour, coriander powder, cumin powder, red chili powder, turmeric, chaat masala, salt, baking soda, and Add some water and whisk well to make a thick and smooth batter.
4. Pat-dry soaked onion rings on an absorbent paper.
5. Take refined flour in a bowl, coat onion rings with it and transfer onto a plate.
6. Dip the dusted rings in the prepared gram flour batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
7. Serve hot with vada pav chutney.
