Our all-time favourite, Aloo Sabzi made a little spicier and flavoursome by cooking it just like it’s prepared in desi Dhabas.DHABA STYLE ALOO SABZIIngredients5 tbsps mustard oil3 medium potatoes, parboiled and cut into 1 inch pieces3 small onion, cut into quarters3-4 green chillies1 tsp cumin seeds1 tsp mustard seeds½ tsp asafortida1 bay leaf½ inch cinnamon stick1-2 cloves1 dried red chilli1 medium onion, finely chopped5-6 garlic cloves, chopped1 medium tomato, finely choppedSalt to taste½ tsp Tata Sampann Turmeric Powder½ tbsp coriander powder1½ tsps red chilli powder1 tbsp freshly chopped coriander leaves Method1. Heat 3 tbsps mustard oil in a non-stick pan, let it smoke. Add potatoes and sauté for 1 minute.2. Add onion, green chillies and sauté well. Cook for 2-3 minutes, sautéing occasionally. Transfer them into a bowl and set aside.3. Heat remaining mustard oil in the same non-stick pan, let it smoke. Add cumin seeds, mustard seeds, asafoetida, bay leaf, cinnamon stick, cloves and dried red chilli. Sauté till fragrant.4. Add onion, garlic and mix well. Cook till golden brown. Add tomato, sauté well and cook till pulpy.5. Add salt, Tata Sampann Turmeric Powder, coriander powder, red chilli powder and mix well. Add ¼ cup water, cover and cook for 3-4 minutes.6. Add the potato mixture and mix. Add chopped coriander and mix well. Cover and cook for 1-2 minutes. Take it off the heat and transfer into a serving bowl.7.
