Experience the flavours of a classic Highway Dhaba with this Urad Dal recipe. DHABA STYLE URAD DALIngredients1½ Tata Sampann Urad Dal Salt to taste1 tsp turmeric powder2 tbsps mustard oil1 tsp cumin seeds2 dried red chillies1 inch ginger, finely chopped1½ tbsps finely chopped garlic2-3 green chillies, chopped½ tsp asafoetida1 large onion, finely chopped 1 large tomato, finely chopped½ tsp red chilli powder½ lemon2 tbsps freshly chopped coriander leaves1 tbsp ghee + for drizzlingMethod1. In a bowl, add Tata Sampann Urad Dal and add sufficient water. Soak it for 4-5 hours. 2. Heat a non-stick deep pan, add soaked urad dal, salt, turmeric powder and sufficient water. Mix well, cover and cook till the dal is cooked completely but the lentil grains intact. 3. Heat mustard oil in a kadai, let it smoke. Add cumin seeds and let the colour change.4. Add dried red chillies, ginger, garlic, and sauté for a few seconds. Add green chillies and mix well.5. Add asafoetida and mix well. Cook for a few seconds.6. Add onion and sauté till golden brown. Add tomato, mix well and add salt. Sauté well and cook till the mixture is pulpy.7. Add red chilli powder and mix well. Cook for 1 minute.8. Add the cooked dal and mix till well combined. Squeeze lemon and add chopped coriander and mix well. 9. Add ghee and mix well. Cook for 1 minute and take it off the heat. Transfer to a serving bowl.10. Drizzle ghee and serve hot.
