Popular Bengali recipe of eggs cooked with potatoes in spicy onion tomato gravy.DIMER JHOL Ingredients8 eggs (dim)6 small potatoes, peeled and halved Salt to taste3 teaspoons red chili powder 1 teaspoon turmeric powder3 tablespoons oil1 tablespoon ginger-garlic paste1-2 green chillies, slit1 large onion, finely chopped1 large tomato, finely chopped1 tablespoon finely chopped fresh coriander leaves Fresh coriander sprig for garnishing Method1. Make incisions on eggs and place in a bowl. Add salt, 1 teaspoon chilli powder and ¼ teaspoon turmeric powder, rub well and set aside. 2. Put potatoes in another bowl. Add ¼ teaspoon turmeric powder, 1 teaspoon chilli powder and salt, mix well and set aside. 3. Heat oil in a non-stick pan. Add eggs and fry till lightly browned. Remove from heat and set aside. 4. In the same pan, add potatoes and fry till lightly browned. Remove from heat and set aside. 5. In the same pan, add ginger-garlic paste and sauté well. Add green chillies and onion, mix and sauté till onions turn brown. 6. Add tomato and salt, mix, well, cover and cook till the tomatoes soften. Add remaining turmeric powder and remaining chilli powder and mix well.7. Add ¼ cup water, mix, cover and boil for a minute. Add fried eggs and potatoes and mix well. 8. Add 1 cup water, mix, cover and cook for 2-3 minutes. Add coriander leaves and mix well. 9. Garnish with coriander sprig and serve hot.
